Just prior to harvest recess, the Viking’s Korner Kitchen, at the Caribou Regional Technology Center, held a special opening day event. The Vikes’ Kitchen is operated by technology students under the direction of CHS instructor Nita Campbell. Student participants are, from left: Trevor Theriault, Misty Denslow, Tabatha LaLonde, D.J. Desjarnais, Lisa Caldwell, Tim McGraw and Chas Holmes.

The foundation the Vikings’ Korner Kitchen is built on includes a three-period classroom Food Service program, instructed by Campbell, which covers a broad spectrum of topics from reading recipes to basic math skills.
Campbell stated, that “students often dream of owning and operating their own business and are very enthusiastic learners. The Food Service class provides opportunities to learn necessary job skills.”
Campbell said that the class periods concentrate on a great number of topics including: value of teamwork, the study of nutrition, diet and exercise; marketing, hygiene, safety, business and math skills, grammar and reading comprehension. The course also provides instruction in, how to get a job and how to keep it; resume writing; compiling portfolios and job interviewing. Students also have the opportunity to join SKILLS USA and compete at both state and national levels.
Through this class students also come to understand how to prepare foods, set the table attractively, become comfortable at greeting, seating and serving their dining guests as well as the importance of proper appearance when working with the public, Campbell said.
One of the most important lessons provided through Campbell’s lessons is “attitude is everything.”
