New Limestone eatery opens on Main Street

    Limestone residents have a new place to meet and eat these days. Paul’s Sub Shop, located on 20 Main Street, is open for business.

    Participating in the grand opening of Limestone’s new eatery, Paul’s Sub Shop are, in front, owners Mary Morin and son Paul Chasse.     “It has taken a good deal of blood, sweat and tears,” laughed Mary Morin, who with her son, Paul Chasse,  own and will be operating the new sandwich shop, “ We (Morin, her husband Carl and son Paul ) did all the renovations ourselves. For two-and-a-half months we painted, replaced the ceilings and installed every single floor tile,” said Morin, “ we bought the building and went to work with the renovations.”
    The new eatery, sporting a clean, bright and welcoming atmosphere, has a seating capacity for sixteen.
    Morin, a native of the area, said, “This is something I have always wanted to do, and for more than a year now Limestone hasn’t had a restaurant.” “ I remember how Limestone used to be. We really needed some place for the farmers to be able to grab lunch or coffee, for students to be able to enjoy and for community families to have a place to go out and eat without having to have to travel. We just want to held bring back some of what once was available here,” she added.
    “ I think the town of Limestone is extremely happy to have us here,” said Morin, “ this is a family business and we plan to work it ourselves,” she said.  Morin also said that starting out there will be seven employees, all local people.  “We’re trying to keep people from the area, in the area,” noted Morin.
    Paul’s Sub Shop offers a variety of sub sandwiches both hot and cold as well as pizzas in small and large sizes, which may be purchased by the slice.
     Other items on the menu include chef salad, macaroni salad, potato salad and cookies.
    “Next month,” said Morin “we’re looking to add soups to our menu,” but for right now we just want to be able to take our time  making sure things are running smoothly. We also look to offer delivery later on.”
    The new eatery, sporting a clean, bright and welcoming atmosphere, has a seating capacity for sixteen.
    Restaurant hours are 10 a.m. — 8 p.m. seven days a week. Take-out orders are available. For more information or to place an order for take-out call 325-2114.
