I received a request from Dawn in Connecticut and a recipe from Maggie in Brewer. Dawn has asked for a recipe for a date square like her Mom used to make. This is the one that my mother and grandmother used. I don’t believe my grandmother had ready access to lemon and I don’t remember her using lemon, but this recipe is very close to what I remember.
Maggie sent in a recipe for healthier hot wings. She is having a Super Bowl party and is planning on making these. She says they are very good and you would be surprised by how “fried” they taste.

Date Squares
1 1/2 cups rolled oats
1 1/2 cups sifted flour
1/4 teaspoon salt
3/4 teaspoon baking soda
1 cup packed brown sugar
3/4 cup butter, softened
3/4 pound pitted dates, diced
1 cup water
1/3 cup packed brown sugar
1 teaspoon lemon juice
Directions: Preheat oven to 350 degrees F. In a large bowl, combine oats, flour, salt, 1 cup brown sugar, and baking soda. Mix in the butter until crumbly. Press half of the mixture into the bottom of a 9 inch square baking pan. In a small saucepan over medium heat, combine the dates, water, and 1/3 cup brown sugar. Bring to a boil, and cook until thickened. Stir in lemon juice, and remove from heat. Spread the filling over the base, and pat the remaining crumb mixture on top. Bake for 20 to 25 minutes in preheated oven, or until top is lightly toasted. Cool before cutting into squares.
Healthy Hot Wings
1/2 cup all-purpose flour
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
10 chicken wings
2 tablespoons butter
1/4 cup hot sauce
1 clove garlic, minced
1 dash ground black pepper
Directions: Mix together flour, paprika, cayenne pepper, and salt in a small bowl. Place chicken wings in a large dish and sprinkle flour mixture over them until well coated. Place on baking sheet and refrigerate for 1 hour, uncovered. Preheat oven to 400 degrees F.
Bake wings in preheated oven until no longer pink at the bone and juices run clear, about 15 minutes per side. Combine butter, hot sauce, pepper, and garlic in a small saucepan over low heat.
Cook and stir until butter is melted and mixture is well blended, about 3 minutes. Place chicken wings in serving bowl and add hot sauce mixture, mixing well.
