I got a message from Craig asking for a recipe for sugar cookies and another from Ken requesting a recipe for an apple crisp that doesn’t use oatmeal. How easy is this? Two of my favorite recipes!
My favorite sugar cookie recipe has nutmeg as a spice. Many have lemon and some rely on vanilla but this one has a holiday taste to it that my family and I enjoy. I also use it with holiday cookie cutters and sometimes frost with colored frosting according to the season. The apple crisp is a recipe I got from a friend long ago (near 30 years ago). Her Mom would make it and send in a dish to me at work. Yumm. Fern, when you talk to your niece, let her know how much we have enjoyed this dish every year.
Soft Sugar Cookies
1/ 2 cup shortening
1/ 2 cup butter
1 tsp nutmeg
1/ 2 tsp salt
1 tsp vanilla
1 1/ 2 cups sugar
2 eggs
4 cups sifted all purpose flour
1 tsp baking soda
1 tsp baking powder
1 cup sour cream
Directions: Cream shortening and butter with nutmeg, salt and vanilla; beat in sugar. Beat in eggs, one at a time. Mix and sift together flour, soda and baking powder: add to the creamed mixture alternately with sour cream. Chill dough thoroughly. Roll dough to 1/ 4 inch thickness and cut with a 3 1/ 2 inch cutter; place cookies on lightly greased cookie sheet about 3 inches apart Sprinkle cookies with granulated sugar and bake in a 400 degree oven for 8 to 10 minutes. This is a high temperature but it makes a soft cookie.
Apple Crisp
4 cups sliced apples
1 tsp cinnamon
1/ 4 tsp nutmeg
1 tsp salt
1/ 4 cup water
3/ 4 cup flour
1 cup brown sugar
1/ 3 cup butter or margarine
Directions: Peel and slice apples into a 2 quart baking dish. Sprinkle with the spices salad and add water. Work flour, sugar and butter together until crumbly. Sprinkle over apples. Press down so mixture will cover apples. Bake at 350 degrees for 30 – 40 minutes. Serve warm with ice cream if desired. It is also great cold.
