We heard from a couple readers this week. Remy sent her favorite snack for parties. Remy suggested we could use it for the Superbowl. Many of you may be disappointed with the Pats not making it to the big game, however, we may have to watch just to see someone — anyone — beat the Seahawks.
Maris also sent in a recipe for Eggplant Parmesan. I’m not sure what to do with an eggplant except for this recipe. It is one of our favorites, but we would love to have more suggestions on what other recipes we could use our eggplant in. Have a great week and keep writing. Enjoy!
Spicy Won Ton Puffs
1 (8 ounce) package cream cheese, softened
1 cup shredded Monterey Jack cheese
1 (4 ounce) can diced jalapeno peppers
2 cloves garlic, pressed
3 green onions, diced
1 (16 ounce) package wonton wrappers
1 quart vegetable oil for frying
Directions: In a medium bowl, mix the cream cheese, Monterey Jack cheese, jalapeno peppers, garlic and green onions. Fill wonton wrappers with approximately 1 teaspoon cream cheese mixture each. Fold wrappers into triangles and press the edges with a moistened fork to seal. In a large, deep skillet, heat the oil over medium high heat. Drop 4 wontons at a time into the oil and quickly fry, turning once. Remove when golden brown and drain on paper towels.
Eggplant Parmesan
3 eggplant, peeled and thinly sliced
2 eggs, beaten
4 cups Italian seasoned bread crumbs
6 cups spaghetti sauce, divided
1 (16 ounce) package mozzarella cheese, shredded and divided
1/2 cup grated Parmesan cheese, divided
1/2 teaspoon dried basil
Directions: Preheat oven to 350 degrees F. Dip eggplant slices in egg, then in bread crumbs. Place in a single layer on a baking sheet. Bake in preheated oven for 5 minutes on each side. In a 9×13 inch baking dish spread spaghetti sauce to cover the bottom. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella and Parmesan cheeses. Repeat with remaining ingredients, ending with the cheeses. Sprinkle basil on top. Bake in preheated oven for 35 minutes, or until golden brown.
