Potential simmering at Loring kitchen

LIMESTONE — The former NCO Club kitchen at the Loring Commerce Centre has been cooking up plenty of good foods recently, and current tenant Chris Hallweaver of Northern Girl LLC. sees a lot of potential for the kitchen he’s worked in since the fall, processing organic potatoes and other root crops.

Though Northern Girl is moving into larger facilities, Hallweaver expressed to the board his belief that there’s good potential in developing a shared kitchen concept for the former NCO Club’s culinary facilities.

At the monthly meeting of the Loring Development Authority’s Board of Directors, Hallweaver and other like-minded individuals elaborated on the concept, which the board seemed interested in.

“We talked a little about what a kitchen like that would look like,” Flora explained. “We have a lot of equipment useful in for a restaurant setting that’s not necessarily needed in a kitchen, so we talked about what equipment would be useful and what we’re lacking.”

The LDA and Hallweaver are now seeking individuals looking to have access to the shared kitchen on a scheduled basis for an all-inclusive hourly rate.

Flora said that they’re targeting individuals and small companies doing small-scale food production, packaging, baking, early-stage product trials and development, caterers and others who could benefit from the part-time use of a fully-licensed and equipped commercial kitchen.

The shared kitchen concept, while purely theoretical at this point, could also possibly include business mentoring services for users.
