Pizza Night too good to contain

To the editor:
    A few months ago I wrote to you extolling the virtues of the Houlton area’s superior collection of restaurants. The Elm Tree, The Vault, The Horn of Plenty, The Courtyard Cafe, The Brookside, Grammy’s Country Inn, The Blue Moose, and The Shamrock are some of our choices, and we have more. Today I would like to make your readers aware of a truly unique dining experience.
    Last Thursday, I enjoyed the Courtyard Cafe’s Pizza Night. Chef Joyce Transue has been doing Thursday Pizza Night for years at the Courtyard. So, how come I never knew about it? Maybe it is my advanced years? Whatever the reason, I regret missing this wonderful culinary experience.
    Pizza Night pizza is like a trip to Rome or Napoli. For your pizza, of course you may pick the toppings to fit your taste. I had pepperoni, sun dried tomatoes, onions and mushrooms. But, there are lots of other choices, even anchovies. The best part is Chef Joyce’s pizza crust (made from scratch) and her unique blend of cheeses. This combination of flavors, textures and crunch will give you a taste sensation you won’t believe can come from a pizza. It is an experience I want to repeat soon, but next time I’m going to take two or three people with me. The pizza turned out to be a bit too big for one guy on a Weight Watchers diet. So, I boxed up the extra, and enjoyed it for several days; with no regrets. It just seemed to get better and better.
    I urge all of your “foodie” readers to try Chef Joyce’s Thursday Pizza Night at the Courtyard Cafe. She is truly a talented chef.
