I had a letter from Sandy in Houlton. She asked about the Pecan Pie Bars and also told me that her neighbor made some of the Frosted Apple Cookies-Sandy said they were “delicious”! Thank you, Sandy! I love to hear from you. Wow. Halloween is over, time has “fallen back” and we have some of the busiest cooking season to come. I thought maybe this week would be a good week to do some recipes for snacks. The ones you have on hand for snacks, or maybe even gifts for the Christmas Holiday to come. Enjoy! This first one is one I want to try this weekend. My daughter loves jalapeno poppers and I can’t find them in the large bag anymore-just a small box-I hope she likes this one!
2 (8 ounce) packages cream cheese, softened
1 cup mayonnaise
1 (4 ounce) can chopped green chilies, drained
2 ounces canned diced jalapeno peppers, drained
1 cup grated Parmesan cheese
Directions: Stir together cream cheese and mayonnaise in a large bowl until smooth. Stir in green chiles and jalapeno peppers. Pour mixture into a microwave safe serving dish, and sprinkle with Parmesan cheese. Microwave on High until hot, about 3 minutes or bake in a 350 degree oven for about 25 minutes. Sounds delicious!
I love the cinnamon and caramel flavor we get from a standard Monkey Bread-but doesn’t this sound good? So refreshing!
1 1/4 cups sugar
1 tablespoon finely grated fresh orange zest
1/3 cup orange juice
1/4 cup melted butter
2 (10 ounce) cans refrigerated biscuit dough, separated and halved
Directions: Preheat an oven to 375 degrees F (190 degrees C). Grease a 10-inch Bundt pan.
Toss the sugar and orange zest together in a small bowl. Whisk the orange juice and melted butter together in a separate small bowl. Roll the biscuit dough pieces into balls. Dip each ball into the orange juice mixture and then roll in the sugar mixture. Arrange the coated balls evenly in the prepared pan. Pour the remaining orange juice mixture over the biscuits. Bake in the preheated oven until golden brown, about 30 minutes. Allow to cool in the pan for a few minutes before turning out onto a serving platter. Serve warm.

1 (7 ounce) jar marshmallow crème
Directions: Using an electric mixer, blend cream cheese and marshmallow creme until mixed thoroughly.
Wow, how simple and cream cheese with marshmallow-need I say more?
